Homemade Gyros. For make-at-home gyro meat this is pretty darn tasty. This may not be as good as my favorite Greek restaurant's gyro but it's as good (or better) than most gyros that you find at restaurants. I served with a tzatziki sauce from this site as well.

Ingredients of Homemade Gyros
- Prepare 2 lb of lamb chops.
- You need 1/2 lb of top sirloin steak.

- You need 3/4 cup of buttermilk.
- It's 2 tsp of season salt.
- Prepare 1 tsp of brown sugar.
- You need 1 tsp of dried parsley.
- Prepare 1/2 tsp of dried crushed mint.
- Prepare 1 tsp of dried crushed rosemary.
- Prepare 1 tsp of garlic powder.
- Prepare 1 tsp of onion powder.
- It's 1 1/2 tsp of dried oregano.
- You need 1 1/2 tsp of dried tyme.
- You need 1/4 tsp of ground black pepper.
- It's 1 1/2 tbsp of jarred minced garlic.
- Prepare 1/2 tsp of lemon pepper.
- You need 1/4 tsp of ground marjoram.
Authentic Greek gyros are made with pork and chicken, but I prefer this version. It uses the same spices but is made with ground lamb and/or beef. Plus it's perfect for making ahead of time and heating it when you make your gyros. Yes, you can make authentic gyros at home --> the texture and flavor of this meat is as good as you get in a good Greek restaurant, without the traditional rotating spit. but this is just the recipe and technique for making the meat, for I'm assuming you know the drill on making the classic gyro sandwich - stuff the meat in a grilled pita with sliced tomatoes, onions and tzaziki sauce.
Homemade Gyros instructions

- Thirdly: thank you to @taylor68too for her added seasoning suggestions! Now let's get to cooking!.
- Remove bones from meat and rinse under cool water. Pat dry..
- Slice meat into thin 1/4 inch slices and each slice should be about 1-2 inches long..
- In a large bowl, mix all marinade/seasonings. Wisk well..
- Add sliced meat. And toss to coat well..
- Cover bowl and refridgerate for 1 hour to soak. Tossing every 15 minutes or so..
- In a large skillet, heat oil..
- Toss in meat mixture with all the marinade..
- Fry, tossing frequently until outsides of meat is seared and insides are still slightly pink. About 5-10 minutes..
- Drain meat from juices and set meat aside but keep warm. Reserve juices..
- In another skiller heat until hot..
- Lightly brush pitas with a bit of the reserved drippings/juices. This will give pitas a nice flavor..
- Cook pitas until nice n browned but not crispy. ( if u don't like your pitas cooked u can skip this process) spray pan with cooking spray as needed..
- TO SERVE:.
- Place desired amount of meat onto a pita..
- Then garnish with onion,tomato and tzatziki sauce..
- Serve hot and enjoy!.
